Flaxseed Chicken Nugget

Ingredients:
1/2 cup flaxseed, ground
3/4 cup water
450 grams chicken thighs (boneless, skinless)
2 teaspoons soy sauce
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 cup all-purpose flour
1 1/2 cups panko
3 tablespoons flaxseed, ground
1/2 teaspoon black pepper
1/2 teaspoon salt

Instructions:
1. In a bowl, mix flaxseed and water together and let stand for 10-15 minutes until thicken.
2.Cut the chicken thighs into bite size pieces and put them in a bowl. Add soy sauce, pepper, garlic powder and onion powder to marinate for 10 minutes
3.Preheat oven to 375 degrees. Fill one mixing bowl with the flour, another with panko, flaxseed, pepper and salt. Stir to evenly combine the panko mixture.
4.Dredge each chicken piece in the flour, until evenly coated, then dip in the flaxseed mixture, and finally in the panko mixture, pressing the panko gently against the chicken to thoroughly coat.
5.Place the chicken on an oven-safe rack on a sheet pan, and bake for 15-20 minutes until golden brown and cooked through. Smaller tenders will cook more quickly. Serve warm with your favorite dipping sauce.
