Oatmeal Cranberry Chocolate Cookies

Recipe provided by Chef Alana Peckham of Alligga Flaxseed Oil Company.

INGREDIENTS
 1 cup Alligga Flaxseed Cooking Oil
 1 ¼ cups brown sugar
 2 large eggs
 2 tsp vanilla extract
 1 tbsp honey
 1 ½ cups all-purpose flour
 1 tsp baking soda
 1 tsp ground cinnamon
 ½ tsp ground nutmeg
 2 ½ cups rolled oats
 1 cup dried cranberries
 1 ½ cup chocolate chips
 ¼ tsp salt

INSTRUCTIONS
1) Preheat the oven to 350°F
2) Cream together the flaxseed oil, brown sugar, eggs one at a time, vanilla and the honey
3) Sift together the flour, baking soda, salt, nutmeg and cinnamon
4) Add the sifted dry ingredients to the creamed mixture and fold together well
5) Mix in the rolled oats, dried cranberries and chocolate chips
6) Drop by spoonfuls onto a baking sheet, two inches apart, and bake for 7 minutes
7) Rotate the baking sheets and continue to bake for 5-7 minutes, or until the cookies are a
light golden brown
8) Allow the cookies to cool on a wire rack
Yields 4 dozen
