Coconut Banana Chia Pudding

Yields: 3 cups

• 1½ cup unsweetened coconut beverage
• ¼ cup unsweetened dried coconut
• 2 ripe bananas
• ¼ cup chia seeds
• 1 tsp vanilla extract

• Add the coconut beverage, vanilla and bananas into a blender and blend until smooth
• Remove the mixture from the blender and stir in the dried coconut and chia seeds
• Allow the pudding to chill in the fridge over in an airtight container before serving
