Warm Quinoa Apple Bean Salad

Yields: 2-4 portions

Ingredients:
• 1 small onion
• ¼ cup apple juice
• 2 cloves garlic
• ⅔ cup red quinoa
• 1/3 cup Alligga flaxseed cooking oil
• 1 cup fresh green beans, cut small
• 1 Tbsp Madras curry powder
• 1 Tbsp salt
• 2 Granny Smith apples

Directions:
• Place the quinoa into a pot of cold salted water and bring to a boil, reduce heat to a simmer and allow to cook until quinoa is fluffy and their white ring
• Strain cooked quinoa and place aside
• Peel and finely dice apples, cut green beans into small rounds, place them both aside
• Finely dice the onion and garlic, start to heat pan on high with flaxseed oil and sauté until onions and garlic begin to sizzle
• Cook the onions for approximately 1-2 minutes to soften slightly, add salt and curry powder
• Continue to cook onions to toast the curry powder for about 1 minute
• Add apples, apple juice, and green beans
• Finish by adding cooked quinoa and mixing everything together, incorporate well so all ingredients are heated
• Serve immediately hot, or cold; as a side dish or main meal
