Golden Milk Blueberry Muffins

Golden Milk Blueberry Muffins

Makes 8

3 eggs
½ cup almond beverage or any other milk
2 tablespoons maple syrup
1 teaspoon vanilla
¾ cup coconut flour
1 ½ teaspoons ground turmeric
½ teaspoon ground ginger
½ teaspoon baking soda
1/8 teaspoon salt
½ cup blueberries, fresh or frozen (do not defrost)
1 tablespoon unsweetened shredded coconut (optional)
1. Preheat oven to 350F. Line a muffin tin with 8 muffin cups.
2. In a mixing bowl, whisk together eggs, almond beverage, maple syrup and vanilla.
3. Add coconut flour, turmeric, ginger, baking soda and salt, stir until well combined. Fold in blueberries.
4. Divide batter into 8 muffin cups, add more blueberries and sprinkle with unsweetened shredded coconut on top if desire.
5. Bake in the oven for 25 minutes. Let cool. Enjoy.
